Potato Taco Skillet

What You'll Need:

  • 3 medium potatoes, diced small (½-inch cubes)

  • 1 small onion, diced

  • 2–3 cloves garlic, minced

  • 1 lb ground beef or ground turkey

  • 1 packet taco seasoning

  • ½ cup water or broth

  • 1 cup shredded cheese (cheddar, Mexican blend, etc.)

  • Salt and pepper to taste

  • Optional toppings: sour cream, salsa, avocado, cilantro, jalapeños.

What To Do:

  1. Cook the potatoes:
I find the best way to cook the dices potatoes would be in an air fryer, however you can cook them in the oven with some light oil until desired crispiness.

  2. Add onion:
Add the diced onion. Cook 3–4 minutes until softened or onion is translucent. Add garlic and cook 1 more minute.

  3. Brown the meat:

    • If using meat: Add the ground beef/turkey to the skillet, cook until browned, then combine everything.

  4. Season:
Sprinkle taco seasoning over the mixture, then pour in the water/broth. Stir and let simmer 3–5 minutes.

  5. Add potatoes & cheese:
After taking potatoes out of oven/air fryer, add them to the skillet and mix to incorporate all the meat with it.. Top with shredded cheese, cover the skillet, and cook 2–3 minutes until melted.

  6. Serve:
Scoop into bowls or serve with tortillas. Add your favorite toppings!
