Potato Taco Skillet
What You'll Need:

3 medium potatoes, diced small (½-inch cubes)
-
1 small onion, diced
-
2–3 cloves garlic, minced
-
1 lb ground beef or ground turkey
-
1 packet taco seasoning
-
½ cup water or broth
-
1 cup shredded cheese (cheddar, Mexican blend, etc.)
-
Salt and pepper to taste
-
Optional toppings: sour cream, salsa, avocado, cilantro, jalapeños.
What To Do:

Cook the potatoes:
I find the best way to cook the dices potatoes would be in an air fryer, however you can cook them in the oven with some light oil until desired crispiness. -
Add onion:
Add the diced onion. Cook 3–4 minutes until softened or onion is translucent. Add garlic and cook 1 more minute. -
Brown the meat:

If using meat: Add the ground beef/turkey to the skillet, cook until browned, then combine everything.

Season:
Sprinkle taco seasoning over the mixture, then pour in the water/broth. Stir and let simmer 3–5 minutes. -
Add potatoes & cheese:
After taking potatoes out of oven/air fryer, add them to the skillet and mix to incorporate all the meat with it.. Top with shredded cheese, cover the skillet, and cook 2–3 minutes until melted. -
Serve:
Scoop into bowls or serve with tortillas. Add your favorite toppings!

Alfredo Stuffed Shells
What You'll Need:

20–24 jumbo pasta shells
-
1 (15 oz) container ricotta cheese
-
1 ½ cups shredded mozzarella
-
½ cup grated Parmesan
-
1 large egg
-
2 cups cooked chicken, shredded
-
1–2 teaspoons Italian seasoning
-
½ teaspoon garlic powder
-
1 jar of Alfredo sauce
-
Salt and pepper, to taste
What To Do:
Preheat oven to 375°F.

Cook the shells:
-
Boil the jumbo shells until just al dente (they will finish cooking in the oven).
Drain and lay them out on a baking sheet so they don’t stick. -
Make the filling:
-
In a mixing bowl, combine:
-
shredded chicken
-
ricotta
-
1 cup mozzarella
-
½ cup Parmesan
-
egg
-
Italian seasoning
-
garlic powder
salt & pepper
Assemble the Shells and Bake
-
Spread a thin layer of Alfredo sauce on the bottom of a baking dish.
Stuff each shell with 1–2 tablespoons of filling and place them in the dish.

Pour remaining Alfredo sauce over the shells, then sprinkle the rest of the mozzarella on top.

Cover with aluminum foil and bake for 20 minutes, remove the foil and bake for an additional 10 minutes.

Turkey Sweet Potato Skillet
What You'll Need:
-
1 lb ground turkey
-
2-3 medium sweet potatoes, peeled & diced
-
1 tbsp olive oil
-
1 small onion, diced
-
1 bell pepper, diced
-
2–3 cloves garlic, minced
-
1 tsp paprika
-
1 tsp cumin
-
½ tsp salt (to taste)
-
¼ tsp black pepper
-
½ cup shredded cheese (cheddar or pepper jack), optional
What To Do:

Brown the turkey:
Add a light amount of oil to a pan set to Med/High heat. Then, add pack of ground turkey and break it up. Cook until it is all brown, add minced garlic to cook into meat. Add seasonings to taste. -
Add bell peppers and onions, cook until they are softened.

Add sweet potatoes and cover with lid:
After about 5 minutes, check tenderness of potatoes. They should be fork tender! -
Add Cheese:
Sprinkle an even amount of mozzarella cheese to the top. Cover until all cheese is melted. -
